Freeze-dried veggies and herbs both taste amazingly close to their fresh brethren when re-hydrated, and don’t rely on artificial flavors or preservatives, meaning that some of us might end up eating better after the apocalypse than before it. To get started preparing healthy family meals in advance, try the following “just add water” recipes; all of them can be stored in Mylar bags until you’re ready to use them. Simple Dried Onion Soup

  • 1 teaspoon beef bouillon granules
  • ¼ cup freeze dried mixed vegetables
  • 3 teaspoons dried onion flakes
  • 1/2 teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1/4 teaspoon seasoned pepper
Add 1 cup of boiling water; cover and let sit for about ten minutes.

Thai Peanut Noodles

  • 1 cup of quick-cooking pasta (think thin egg noodles, angel hair pasta, thin rice noodles, etc.) broken into pieces for easy storage.
  • ¼ cup freeze dried chopped chicken
  • ¼ cup freeze dried mixed vegetables
  • 1-1/2 teaspoons powdered chicken flavour base (or boullion granules)
  • 2 tablespoons PB2 powdered peanut butter
  • 1-1/2 teaspoons freeze dried cilantro
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground ginger
  • a pinch or two, depending on your preference, of ground cayenne pepper
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon salt (or more to taste)
Add 1 cup of boiling water; cover and let sit for about ten minutes.

Cous Cous with Chicken and Vegetables:

  • 1/3 cup whole wheat cous cous
  • 1/3 cup freeze dried chopped chicken
  • ½ cup freeze dried mixed vegetables
  • 1 tablespoon freeze dried onions (or 1 teaspoon dried onion flakes)
  • 1-1/2 teaspoons chicken boullion granules
  • 1-1/2 teaspoons freeze dried herbs; try 1/4 teaspoon each dried thyme, sage, & parsley, or customize your own blend
  • ¼ teaspoon garlic powder
  • 1/8 teaspoon ground black pepper
  • ¼ teaspoon salt (or more to taste)
Add 1-1/2 cups boiling water; cover and let sit for about ten minutes.

Bonus: You can even have dessert!

This “just add water” chocolate cake mix was designed to be easily whipped up from all-dry ingredients:
  • 1 cup flour
  • 3/4 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 cup dry milk
  • 1/4 cup cocoa
  • 1 dash salt
Directions: Combine all the dry ingredients and store them appropriately. When ready to use them, mix 4 Tbl mix with 2 Tbl water in a bowl or mug, and cook (with whatever heat source you have available) until the cake looks dry on top and a fork comes out clean.
